Mini Applesauce Muffins

  1. Preheat oven to 375 degrees F and grease a mini muffin tin or line with liners.

  2. Combine the applesauce, prunes, butter, milk, egg and vanilla in a medium bowl.

  3. Add the flour, sugar, baking powder, baking soda, cinnamon and salt and gently fold together.

  4. Fill the prepared muffin tin to the edge of each cup. Bake for 16-20 minutes or until lightly browned around the edges and a toothpick inserted into the center comes out clean.

  5. Remove from oven and let cool for 2 minutes in the pan. Remove muffins and place on a wire rack to cool.
