Loaded Baked Potato Soup

  1. In a large stock pot, melt butter over medium heat. Whisk in flour and allow the mixture to cook for a few minutes.

  2. Slowly add in milk, 1 cup at a time, whisking really well between each cup. Continue whisking after all cups have been added until the mixture starts to thicken a bit.

  3. Add in potatoes and green onions then bring to a boil, stirring frequently.

  4. Reduce heat to low then stir in bacon, cheese, sour cream, salt and pepper.

  5. When the cheese has melted, serve immediately. Garnish with additional cheese, bacon and green onions.
